The publication of the first Slow Food Catalunya 2025 guide has been promoted by the Slow Food Catalunya Association, an entity linked to the non-profit ecogastronomic association Slow Food, created in 1989.
The goal of Slow Food is to promote a gastronomic culture based on high-quality food, produced sustainably, respecting both the environment and people. This involves working with organic, local, and seasonal products, prioritizing those at risk of disappearing, reducing waste, and encouraging direct purchases from local producers. Additionally, it aims to boost the local economy and raise awareness in society about the importance of this gastronomic model. For this reason, it is reflected in restaurant menus and is integrated into culinary school curricula.
The book includes interviews with individuals who advocate this methodology, such as Maria Nicolau and Joan Roca, and features a list of restaurants, suppliers, and schools in Catalunya distinguished with the Km0 Slow Food seal. Editorial Gavarres is responsible for the publication’s graphic design, while Nexe Impressions manages printing and binding. The guide is printed on high-quality Fedrigoni Paper.
